The sun shines on beautiful tomatoes in the Mediterranean and fills them with such succulent flavours.
Sitting on the beach in Marbella, down the very bottom of Spain, opposite from Africa, I feel inspired to prepare easy lazy and delicious meals using the gorgeous local produce.
Chop the tomatoes and place in a salad bowl, include all the tasty juice that comes out of the tomatoes when you chop them. Pan fry garlic in olive oil and add to the tomatoes in the bowl. Pick some thyme, the leaves of 3-4 springs. Season with a little salt & pepper and stir. Garnish with a few springs of thyme. The red and green colours are so vibrant!
You can make some toast and add the tomatoes on top to enjoy bruschetta and a glass of Vino.
