Energy balls

GTG ENERGY BALLS

Anastasia makes these to take to her gruelling gymnastics training sessions. When she makes a batch of these they don't last long as all her buddies are gathering around like seagulls in the hope of striking gold! Packed full of delicious yummy goodness, these will energise you without the sugar high. Try these instead of reaching for that sugary chocolate bar. They will keep for a week in the fridge. They are all dairy free to aid better digestion. We dare you not to smile when you bite into these!

Ingredients

Makes 10 Energy Balls

• 1.5 cups Gluten Free Oats
• 300g dried fruit (dates, prunes or raisins - whatever you have in your kitchen)
• 2 tsp vanilla extract
• Pinch of pink Himalayan salt

Toppings - you can roll the energy balls in; chia seeds, ground flax seeds, cocoa, coconut - whatever takes your fancy!

Cooking method

  1. Soak the dates/dried fruit in just enough warm water to cover it for 5-10 mins (or longer if you can to help the blending process).
  2. Blend the dates/dried fruit in a food processor, reserving the water, until a thick paste is formed.
  3. Add the rest of the ingredients (except the toppings) to the date paste and blend until all the ingredients are combined. You can add some of the reserved date water if the mixture is too thick and is having trouble blending together.
  4. Refrigerate the mixture for 30 mins.
  5. Roll into balls the size of a 50 pence coin using the palms of your hands and then roll in the topping of your choice.
  6. Store in a airtight container in the fridge.
